According to an LA Times poll, LA's most popular birthday cake consists of these three components: yellow cake, berry filling and cream cheese frosting. This cake is delicious with butter, vanilla and egg yolk. Its consistency is light and the crumb is firm – a cake with substance that also goes well with an airy, soft icing with lots of flavor. Not buttercream, but a combination of whipped cream, cream cheese and both crème fraîche (or sour cream) and mascarpone. (If the frosting becomes too soft or too warm while decorating, refrigerate for a few minutes and then continue.) The tangy, creamy frosting is also delicious with the cake's filling of berry jam and fresh berries.
Note: This makes a three-layer 8- or 9-inch cake. You will need parchment paper, cooking spray and baking pans (three 8- or 9-inch round pans), a piping bag, an offset spatula, and a hand mixer or food processor.
