Andrea Potischman says she's “a bit of a cookie fanatic,” although as a former chef she likes savory foods more than sweet ones. “I love classic cookies reimagined,” she says, and this is a modern take on a classic nut chocolate chip cookie that gives bakers the opportunity to play around with ingredients, flavors and textures.
She recommends variety: use other nuts or leave them out and try different types of chocolate. You can spread this batter into a smaller pan and bake to create a thicker cookie. Bake longer for a darker, crispier cookie. Dip it into melted white or dark chocolate – partially dipping, drizzling with a fork, or even pouring the melted chocolate into a piping bag. “Add more chocolate and people get really excited,” says Potischman. “Add sprinkles if you want to dress it up for a cookie swap.”
