Potato salad is one of the dishes from the western canon. It is also a regular restaurant in Izakaya and Yoshoku, from cheap and happy to high quality. As a rule, chefs have a typical home potato salad, and mine is used with Iburi Gakko – a smoked rice brane – single -in Daikon.
