Quarter leaves' Grapefruit pie recipe

The bright, sour citrus curd in this grapefruit cake out of anger. The confectioner Hannah Ziskin of quarter leaves in Echo Park calls this cake “Heidis Grapefruit cake”, named after the neighbor, whose trees carry sweet, mild grapefruits.

The Graham Cracker crust comes together in minutes and the filling is alive and creamy at first.

A small amount of citric acid and malic acid is used to control the tartness of the filling. These are online and available in special shops.

Lemon oil called Agumato – “one of the mother oils” in quarter sheets, which were compiled by the joint presentation of the olives and fruit – is also available online and in special shops.
