People tend to shame those who love Arby's; I don't understand the hate. What's not to love? Arby's' literal catchphrase is “We Have the Meats,” and how can you not love a place like this? I wouldn't necessarily say it's in my top five fast food options, but if I see one on the 10 Freeway on a long drive to Las Vegas, I stop. This is our “luxurious” twist on the classic Beef 'n Cheddar at Arby's.
Our latest version of this consists of a sesame brioche bun that we make ourselves, but I'll save you that work; Any enriched roll or potato roll will work here. To make the cheese sauce, we use a key ingredient called sodium citrate to create a smooth, pourable cheese. We like this version because you don't have to make a roux and the gravy remains stable throughout the warming and reheating process.
