In the Cento Raw Bar in West Adams, boss Avner Levi created an immersive restaurant that is located in a “Mermaid von Mermaid's” in which feature tea-sea fruits and crudos are laced with farmers market. Hamachi Crudo with cherries, citrus fruits, Thai basil and Jalapeños is one of Cento's typical summer dishes. Levi says other types of stone fruits would also season well.
